Delicious pancake recipes for shrove Tuesday

BAILEYS CHOCOLATE CHIP PANCAKES

Ingredients

1 cup of flour

2 tbsp of brown sugar

1 tsp of baking powder

Pinch of salt

½ cup of Buttermilk/milk

25ml Baileys Original Irish Cream

1 egg

1 cup of chocolate chips

 Instructions

1.To make the pancake batter, mix 1 cup of flour, 2 tbsps of brown sugar, 1 tsp of baking powder and a pinch of salt

2.In a separate bowl, whisk together 1/2 a cup of buttermilk, 25ml of Baileys Original Irish Cream and 1 egg. Also add some vanilla extract, if you fancy it.

3.Combine all the ingredients and toss in your milk chocolate chips to make a smooth batter.

4.Heat a pan, add a small knob of butter to avoid sticking and ladle on a blob of the mixture. Wait for this to rise and bubble, then take a spatula and flip over.

5.Once cooked through (It should only take a minute or two in a hot pan) serve immediately.

 HEALTHY PANCAKES WITH GLUTEN FREE OPTION

Ingredients:

125g wholemeal flour (use buckwheat if you're celiac – it's gluten-free)

2tsp baking powder

1 egg, beaten

300ml skimmed milk

1 small banana, well mashed

(Makes 4 servings)
